Description
Zingiber officinale is the culinary ginger popular in a wind range of Asian cuisines. This form called “Baby Ginger” is particularly fast-growing and produces yellow-skinned, fleshy yellow rhizomes quickly within 4-6 months from planting. Rhizomes are best harvested at this stage when they are juvenile and offer mild, tender flavours and don’t have to be peeled. After harvest, the shelf life is about 1-2 weeks at room temperature or longer in the fridge. Red-orange flowers bloom in summer amongst the dark green, fragrant foliage that rises to 2-4 feet tall. Protect from frost. Use in the edible or patio garden and in containers where it can be harvested fresh as needed. Potentially hardy outdoors in protected locations in coastal BC. Grow as a houseplant and protect in winter in colder zones.
